Conventional grills will require approximately 10 minutes to preheat with the lid closed and can achieve approximately 700 degrees. These grills will often heat a secondary source which in turn will heat the air inside the grill. Once the hood is opened most of the heat will dissipate, then meat is placed on the grilling surface and the hood is closed once again to achieve the most heat possible. These grills normally do not get hot enough to create good searing and often will dry out your food. ======================================================
Infrared grills require approximately 3 minutes to preheat with the lid opened and can achieve approximately 1500 degrees. These grills offer direct cooking under high heat which creates searing. This will lock all flavors and juices into your meats and provide steak house quality. Because of the high heat, this will cut your preheating and grilling time in half.
